Ingredients

  • 2 large onions
  • 4 carrots
  • 2 green peppers
  • 200g of peas
  • 2 tablespoons of curry powder
  • 300g of rice
  • 900mL of water
  • Salt and pepper to taste
  • Optional: chopped fresh cilantro or parsley for garnish

Instructions

Brown the chopped onions in an oiled pan. When the onions are caramelized, add the diced tomatoes. Cook over medium heat until you have a sauce. Add the diced carrots and peppers and spices to the pan and cook for 5 minutes. Add the rice, peas and water, cover and simmer for 30min, stirring occasionally.

Instructions:

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onions and sauté until they become translucent.
  3. Stir in the curry powder and cook for a minute to release its flavors.
  4. Add the diced carrots and green peppers to the pot. Cook for a few minutes until they start to soften.
  5. Pour in the rice and stir to coat it with the spices and vegetables.
  6. Add the water and peas to the pot. Season with salt and pepper.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the vegetables are tender.
  8. Once the rice is cooked, fluff it with a fork and let it sit covered for a few minutes before serving.
  9. Garnish with chopped cilantro or parsley if desired.
